Holiday Stuffing

6 ounces dried cherries
1 cup Madeira
14 slice of day-old homemade style bread, toasted and torn into small pieces (about 8 cups)
1 1/2 cups toasted pecans
1 cup onion, chopped
1 cup celery, chopped
1/2 cup shallots, chopped
1/2 cup sweet butter
3 apples, crisp and coarsely chopped
1/2 cup golden raisins
2 teaspoons dried tarragon
1/2 cup flat leaf parsley, chopped
2 teaspoons dried thyme
10-12 leaves of dried sage
salt and pepper




Place dried cherries in a bowl with Madeira and soak for several hours, or overnight. Combine bread pieces and toasted pecans in a large bowl. Drain cherries, reserving Madeira, and add to the bread mixture. In a skillet, saute« onion, celery and shallots in butter until the vegetables are softened. Add this to the bread mixture. Add apples, raisins, parsley, tarragon, thyme, sage, salt, pepper and reserved Madeira and toss stuffing well. Yields enough stuffing for an 18 lb. turkey
