Couscous Salad With Spinach and Mandarin

1 1/4 cups water
1 1/4 teaspoons mint leaves
1/2 teaspoon salt
1 cup couscous, uncooked
1/2 cup chopped fresh spinach, firmly packed
1/4 cup celery, diced
1/4 cup red onion, diced
11 ounces mandarin oranges, drained, juice-reserved
1/4 cup honey mustard vinaigrette dressing, fat-free
1/4 teaspoon pepper
4 hard-cooked eggs, quartered, lengthwise

Bring water, mint leaves and salt to a boil in a medium saucepan; stir in couscous. Remove from heat; let stand, covered, 5 minutes. Fluff with a fork. Stir in next four ingredients. In separate bowl, combine 1/4 cup of reserved mandarin orange juice, honey mustard dressing and pepper; stir with wire whisk until blended. Add to couscous mixture. Toss well. Add sliced eggs and lightly toss to coat. Serve over a bed of spinach or over assorted lettuce leaves.
