Macaroni & Cheese

2 tablespoons margarine, reduced calorie, melted
2 tablespoons flour
1/2 cup skim milk, evaporated
2 cups reduced-fat cheddar cheese, shredded
10 ounces canned diced tomatoes with green chilies
1 cup low-fat cottage cheese
1 cup nonfat sour cream
1 egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups elbow macaroni, cooked
1/4 cup dry bread crumbs
1 teaspoon margarine, reduced calorie, melted
1/4 teaspoon paprika




Melt 2 tablespoons margarine in large saucepan. Stir in flour until smooth. Add evaporated skim milk and stir until thickened, then add next 7 ingredients, mixing well. Remove from heat; gently stir in macaroni. Spoon into lightly greased 2-quart casserole. Combine bread crumbs and next 2 ingredients; stir well. Sprinkle over casserole. Cover and bake at 350F for 30 minutes.
