Potato Salad Parmesan

6 pounds new red potatoes, cut into 1 inch cubes
2 cups olives, halved
2 cups fresh parsley, coarsely chopped
1 1/2 cups red onion, chopped
1 cup Parmesan cheese, shredded
2 cups low-fat ricotta cheese
1 cup olive oil
3/4 cup cider vinegar
6 to 7 garlic cloves, chopped
1 teaspoon salt
1/8 teaspoon white pepper




Cook potatoes in boiling water just until tender. Drain and cool.
In a large bowl, combine potatoes, olives, parsley, onion and Parmesan cheese.
Prepare dressing: In a blender or processor, blend ricotta cheese, oil, vinegar, garlic, salt and pepper. Pour over potato mixture, and blend.
Cover and chill until serving.


Notes:
Ingredients #6-11 are for the dressing.
