Zesty Lamb Taco Skillet

1 pound boneless American lamb, cut into 1/8-inch strips
1 tablespoon Crisco® Vegetable Oil
1 clove garlic, minced
1 8 ounce can tomato sauce
1 cup corn, fresh or frozen
1 cup green peppers, cut in strips

In large skillet with lid, heat oil and garlic to medium hot and add lamb strips. Cook and stir until lamb is no longer pink. Add broth, tomato sauce, and seasoning mix. Bring to a boil, reduce heat; cover and simmer 5 minutes. Remove lid and add corn and peppers. Bring to a full boil and stir in rice. Remove from heat, cover again and let stand 5 minutes or until moisture is absorbed. Fluff with fork. May be topped with grated cheese, sliced black olives, and crushed tortillas chips for serving.
