Minnesota Wild Rice & Lamb Skillet

8 ounces boneless American lamb, cut into thin strips
Non-stick cooking spray
1 3/4 cups water
2 tablespoons butter
1 4 oz. can sliced mushrooms, drained
1 medium carrot, shredded
2 green onions, finely chopped

Spray skillet with non-stick spray. Heat skillet, stir-fry lamb strips over med./high heat for 3 minutes or until brown. Add water, margarine, rice and seasoning packet, and mushrooms to lamb. Bring to boil. Reduce heat; cover and simmer about 5 minutes or until all liquid is absorbed. Stir in carrot and onions; cook 1 to 2 minutes more.
