Lamb Fajitas

1-1 1/2 pounds American lamb leg, sliced 11/4" thick 1" strips 1 1/2" long
1/2 cup green onion, sliced
1/2 cup red or green pepper
1/4 cup cilantro, chopped (optional)
1 fresh lime
6 medium flour tortillas
1/2 cup thinly cut onion, wedges
2 tablespoons fresh lemon juice
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon seasoned salt
1/2 teaspoon red pepper flakes
6 Tablespoon low-fat plain yogurt
6 cherry tomatoes, halved

Directions: Combine marinade. Mix lamb, green onion, bell pepper and cilantro. Cover; refrigerate for at least 4 hours (overnight is better.) In a non-stick skillet quickly sauté meat mixture, stirring constantly (approximately 4 to 5 minutes.) Squeeze fresh lime juice over cooked meat mixture. Spoon into warmed flour tortillas. Garnish with yogurt and cherry tomatoes.
