Italian Pasta Lamb Soup

1 pound boneless American leg of lamb, cut in 1/2-inch cubes
2 teaspoons olive oil
1 can (28 oz.) tomatoes, diced
2 cans (15 ounces) tomato sauce, reduced sodium
3/4 cup red wine
1/2 teaspoon black pepper
2 tablespoons lemon juice
2 teaspoons oregano leaves
1 cup water
1 large green pepper, thinly sliced
1 cup fresh mushrooms, sliced
1 large onion, finely chopped




Heat olive oil in large saucepan; quickly brown lamb cubes. Add tomatoes, tomato sauce, red wine, pepper, lemon juice, oregano, garlic, and water. Bring to boil; reduce heat, cover and simmer for 15 minutes. Add green pepper, mushrooms and onion. Cook until vegetables are tender, about 30 minutes. Meanwhile cook the 2 cups of noodles in 5 cups of water according to package directions. Drain and add to soup just before serving.
