Pita Pocket Roll-Ups with Sweet Mustard

2 tablespoons plain lowfat yogurt
1/4 cup yellow mustard
1/3 cup confectioners' sugar
1 dash pepper
3 pita pockets, white or whole wheat
6 slices turkey, cut in half
3 slices Monterey Jack cheese
6 small Romaine lettuce leaves
1 tomato, cut into wedges
6 sticks celery
6 sticks carrots




To make mustard sauce, stir together yogurt, mustard, sugar, and pepper in a small bowl.

Cut pita pockets in half. At pocket opening, cut two sides of pocket apart. Spread sweet mustard sauce on pita.

Cut cheese slices into fourths. Lay turkey slice, cheese, and lettuce leaf in top of cut pita. Also add a tomato wedge, celery stick, or carrot stick. Or if your child prefers, serve these vegetables on the side. Roll up and stick toothpick all the way through sandwich to hold together. Garnish Roll-ups with any remaining tomato wedges, celery sticks, and carrot sticks.


Notes:
Ingredients #1-4 are for the Sweet Mustard.
