Pizza-style stuffed potatoes

1/2 pound lean ground American lamb
4 large baking potatoes
1/3 cup onion, finely chopped
1/3 cup green pepper, chopped
1/4 cup mushrooms, chopped
2 teaspoons parsley flakes
2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
1/2 cup nonfat yogurt
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup low fat mozzarella cheese, grated, divided
1/2 cup pizza sauce
12 black olives, sliced (optional)
2 tablespoons finely Grated Parmesan cheese

Pierce baking potatoes with meat fork or sharp knife and microwave on high for 10-12 minutes or according to the manufacturer's directions. Cool slightly. Cook lamb in medium skillet untill no pink remains. Add onions, green pepper and mushrooms; cook for 2 minutes. Add parsely, Italian seasonings and garlic powder. Stir to combine. Make a lengthwise slit in each potato. Scoop out pulp and place in a medium bowl. Add yogurt, salt, pepper and beat well. Add 2/3 cup grated mozzerella cheese and groun lamb mixture and mix. Stuff potato shells with mixture. Top each baked potato with pizza sauce, remaining mozzarella cheese, olives and parmesan cheese.*
Bake in 400 degree oven for 20 minutes or until bubbly.

* Can be double wrapped and frozen at this point. To serve, thaw in refrigeratorand bake as directed.
