Caribbean Lamb Salad

1 pound boneless American lamb sirloin, cooked and cubed
1/2 red pepper, chopped (or 2 ounces pimento)
1/2 green pepper, chopped
1/2 cup cashews, lightly roasted
3 green onions, chopped
1/2 cup celery, chopped
1/2 cup green seedless grapes
1/2 cup red seedless grapes
1/2 cup pineapple tidbits
1/2 cup raisins
1 cup shredded coconut
1 cups pasta, cooked
3/4 cup mayonnaise
3/4 teaspoon Dijon mustard
2 Tablespoon curry powder
1/2 teaspoon lemon juice




Combine lamb, peppers, cashews, onions, graqpes, pineapple, raisens, coconut and pasta in a large bowl. Mix mayonnaise, mustard, curry powder and lemon juice dressing. Toss dressing with salad ingrediants. Serve on a bed of lettuce.
