Chilly Lemon Pie

3 egg yolks
10 ounces sweetened condensed milk
1/2 cup fresh lemon juice
1/2 teaspoon lemon extract
6 drops yellow food coloring
9 inch graham cracker crust
8 ounces Whipped topping
1 cup coconut, fresh, grated
1 tablespoon grated lemon zest, fresh
2 tablespoons sugar
2 tablespoons fresh lemon juice




Preheat oven to 350 F. Combine egg yolks, condensed milk, lemon juice and lemon extract; blend until smooth. Add food coloring and stir until well mixed. Pour into pie shell and bake for 10 minutes. Place in refrigerator and cool for 20 minutes. Spread with whipped topping; sprinkle with coconut topping. Cover, freeze. Serve frozen.
Coconut Topping: Preheat oven to 350 F. Combine above ingredients. Spread on baking sheet and bake until toasted brown, stirring occasionally; set aside and cool.


Notes:
Ingredients # 8-11 are for the topping.
