Cranberry Stuffed Lamb Chops

1 bottle (8 ounces) cranberry chutney
1/2 cup celery, finely chopped
1/2 cup toasted pecans
2 cups cornbread stuffing mix

In a bowl combine chutney, celery, 1 cup of the cornbread stuffing mix and pecans; toss to mix well. Trim chops and cut a pocket into the meaty side of each chop. Spoon one rounded tablespoon stuffing into each chop. Add remaining cornbread stuffing mix to cranberry mixture along with 1/3 cup water. Toss to mix well. Place chops in a 13x9x2-inch baking dish or pan; sprinkle lightly with salt and pepper. Spoon stuffing around chops. Bake in 450-degree oven for 15-20 minutes or until chops reach medium doneness (160 degrees). Serve stuffed chops with baked stuffing.
