Quick Lamb and Rice Stew

2 large carrots, cut into 1/2-inch slices
8 ounces fresh mushrooms, halved
1 green pepper, cut into 3/4-inch squares
1 tablespoon chutney, optional
Non-stick cooking spray

Spray a large saucepan with non-stick coating. Brown lamb cubes over medium-high heat. Add water as called for on rice mix package. Add rice mix with seasonings, carrots and mushrooms, bring to a boil and simmer for time directed on package adding the green peppers the last 10 minutes of cooking. Stir chutney, if desired.
