Minute Lamb Minestrone
This is a great soup recipe that uses lamb!

1 1/2 cups (8 ounces) lamb, cooked, cut into small cubes
1 can (14.5 ounces) diced tomatoes
3 tablespoons tomato paste
1 8.75 oz. can canned kidney beans, drained
1 teaspoon Italian seasoning, crushed
pesto, optional




In a large saucepan combine pasta/vegetable mix and beef broth. Bring to a boil; reduce heat. Cover and simmer 5 minutes. Stir in tomatoes, tomato paste, kidney beans, Italian seasoning and lamb. Bring to a boil; cook 1 minute to heat through. Serve with a dollop of pesto, if desired.

*Referring to Green Giant’s PASTA ACCENTS mixes; Garden herb Seasoning or Garlic Seasoning.

**To substitute fresh American lamb, spray saucepan with non-stick pan coating and stir-fry briefly. Continue as directed.
