6 large egg whites
1 cup sugar
1/2 cup finely ground blanched almonds or all-purpose flour
3 cups flaked sweetened coconut, shredded
1 cup miniature chocolate chips, optional




Preheat oven to 375 F. Line 2 baking sheets with aluminum foil and coat with non-stick cooking spray.

In large mixing bowl, beat the egg whites until frothy. Gradually add the sugar and continue beating until soft peaks form. Gently blend in the ground almonds and coconut. Stir in the chocolate chips, if using.

Drop by tablespoonfuls onto the baking sheets, leaving about 1 inch between them.

Bake until the edges and tops just begin to turn golden, about 12 minutes. Cool for about 10 minutes on the baking sheets before removing to wire racks.
