PB&J Crunchy French Toast

1/2 cup finely chopped peanuts
2 large eggs
3 tablespoons milk
4 slices day-old bread
Fresh fruit OR spreadable fruit, OPTIONAL

Spread the peanuts in a shallow dish.

Beat the eggs and milk in another shallow dish until blended.

Soak 1 bread slice at a time in the egg mixture, turning once. Lift the bread from the egg and coat both sides with the peanuts.

Coat a large nonstick skillet with cooking spray and heat over medium heat. When hot, reduce the heat to medium or medium-low and cook 2 slices of bread for 2 to 3 minutes until golden brown and no visible liquid egg remains. Adjust the heat as necessary so that the peanuts do not burn.

Wipe the skillet with a paper towel and then spray again. Cook the remaining 2 slices of bread and serve the French toast.

Serve with Fresh fruit OR spreadable fruit.
