Pueblo Green Chile Stew
This super easy soupy stew is perfect on blustery days, or anytime you yearn for comfort food. Try it with tortillas, cornbread or corn muffins and a big green salad.

2 pounds boneless cubed pork sirloin or pork shoulder
1 tablespoon vegetable oil
Three 12- ounce cans corn kernels, drained
2 stalks celery, diced
2 medium potatoes, diced
2 medium tomatoes, coarsely chopped
Three 4- ounce cans green chilies, diced
4 cups chicken broth
2 teaspoons ground cumin
1 teaspoon dried oregano
Salt
8 corn or flour tortillas, warmed




In a large Dutch oven or a deep skillet with a lid, brown the pork cubes in the oil over medium-high heat until lightly browned. Add the remaining ingredients, cover and simmer for 1 hour. Serve with the tortillas.
