Meatloaf and Vegetables
What makes this meatloaf so tasty is the addition of a can of tomato soup.  Served with roasted potatoes and carrots, this dish is comfort food at it's best.

1 1/2 pounds Ground Beef
2 cans (10 3/4 ounces each) Campbell's® Condensed Tomato Soup
1/2 cup dry bread crumbs
1 tablespoon Worcestershire sauce
1/8 teaspoon ground black pepper
1 egg, beaten
1 small onion, finely chopped (about 1/4 cup)
6 medium potato (about 1 3/4 pounds), cut into quarters
6 medium carrots, cut into 2-inch pieces (about 3 cups)
3/4 cup water




Thoroughly mix the beef, 1/2 cup soup, bread crumbs, Worcestershire, black pepper, egg and onion in a large bowl. Shape the beef mixture into an 8 x 4-inch loaf in a 13 x 9 x 2-inch baking pan. Arrange the potatoes and carrots around meatloaf in the baking pan.
Bake at 375°F. for 30 minutes. Spoon off any fat.
Stir the remaining soup and water in a small bowl. Spoon the soup mixture over the meatloaf and vegetables. Bake for 30 minutes or until the meatloaf is cooked through and the vegetables are fork-tender.
