1 medium onion, chopped (about 1/2 cup)
2 cloves garlic, crushed
1 pound ground beef
salt & pepper
1 can (about 14.5 ounces) Italian-style diced tomato, drained
3/4 pound green beans, cut into 1-inch pieces, cooked (about 2 1/2 cups)
Idahoan® original mashed potato, prepared according to package directions for 8 servings
1 egg, beaten

Heat the oven to 350°F.
Cook the onion, garlic and beef in a 10-inch skillet over medium-high heat until the beef is well browned, stirring occasionally to separate meat. Season with salt and pepper to taste. Pour off any fat and place the beef mixture into a 2-quart casserole.
Spoon the tomatoes over the beef mixture and top with the green beans.
Spoon the potatoes over the green beans and brush with the egg.
Bake for 30 minutes or until the mixture is hot and bubbling. Broil for 1 minute to brown the potatoes, if desired.
Easy Substitution: You can substitute 1 can  (about 15 ounces) green beans, drained, for the fresh green beans.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
