Parmesan Goldfish Brittle

3/4 cup butter, softened (1 1/2 sticks)
1/2 cup sugar
1 egg
1 cup all-purpose flour
1/2 cup Grated Parmesan cheese
2 cups Pepperidge Farm® Parmesan Goldfish®, or your favorite flavor

Heat the oven to 350°F. Line a baking sheet with aluminum foil.
Place the butter and sugar in a large bowl. Beat until creamy using an electric mixer on medium speed. Beat in the egg. Gradually add the flour, scraping the bowl occasionally. Add the cheese and beat until the mixture is well blended. Stir in the crackers.
Spread the cracker mixture in an even layer on the prepared baking sheet. (The mixture will not be a uniform shape.)
Bake for 20 minutes or until it's golden brown. (The edges may brown more quickly.) Remove the "brittle" from the baking sheet and let cool completely on wire racks. Break the "brittle" into unevenly-shaped pieces.
Recipe Note: To wrap for gift-giving, arrange the "brittle" in decorative clear party bags and close with twist-ties or ribbon.
