Miniature Monte Cristos

6 slices Pepperidge Farm® White Sandwich Bread, crusts trimmed
2 tablespoons spicy-brown mustard
6 very thin slices fully cooked ham
6 very thin slices fully cooked turkey
6 very thin slices Swiss cheese
1 cup buttermilk baking mix
2 eggs
1 can (12 ounces) evaporated milk
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
Crisco® pure vegetable oil
spicy-brown mustard




Flatten the trimmed bread slices with a rolling pin. Spread each slice with 1 teaspoon mustard. Place each slice on a separate piece of plastic wrap. Top each slice with 1 slice each ham, turkey and Swiss cheese. Roll each topped bread slice tightly, using the plastic wrap to assist in rolling into an even log shape. Chill the wrapped rolls for 30 minutes.
Stir the baking mix and eggs in a medium bowl. Add the evaporated milk, salt and cinnamon and stir until well mixed. Heat 1 1/2 inches oil in a deep-fat fryer or 4-quart saucepot to 375°F. Unwrap the rolls and secure each with 4 wooden picks. Using a serrated knife, slice each roll into 4 pieces (each secured with wooden pick), making 24 pieces in all.
Dip the pieces in the baking mix mixture, allowing some of the mixture to be absorbed. Fry a few pieces at a time in the hot oil for 1 to 2 minutes, or until they're deep golden brown, turning often. Place the pieces on paper towels to drain. Serve immediately or keep warm in a 175°F. oven. Serve with spicy brown mustard for dipping, if desired.
Make-Ahead: To make a day ahead, prepare and fry as directed. Cool. Cover and refrigerate. Reheat in a single layer on a baking sheet at 425ºF. for 8 to 10 minutes.
