Cranberry-Orange-Sauced Sweet Potatoes
Roasted sweet potatoes are good on their own...but they're irresistible when topped with this flavorful cranberry-orange sauce.

6 medium sweet potato or yams
1/4 cup (1/4 stick) Crisco® all-vegetable  shortening
1/2 teaspoon salt
1/4 cup plus 2 tablespoons water
1 1/4 cups fresh cranberry
1/2 teaspoon cornstarch




Heat the oven to 400ºF.  Prick the potatoes with a fork and place into a 3-quart shallow baking dish.
Bake for 40 minutes or until the potatoes are tender.
Heat the shortening in a 3-quart saucepan over low heat. Add the brown sugar, salt, orange juice and 1/4 cup water and cook and stir until the brown sugar is dissolved.  Stir in the cranberries and heat to a boil.  Cover and cook for 5 minutes or until the cranberries begin to pop.
Stir the cornstarch and remaining water in a small bowl until the mixture is smooth.  Add the cornstarch mixture to the saucepan and cook and stir until the mixture boils and thickens.
Split the potatoes.  Spoon the cranberry mixture over the potatoes.
