Peanut Butter Cups
Why purchase store-bought peanut butter cups when it's more fun to make them at home?  They're easy to make and they taste really good too.

3/4 cup Jif® creamy peanut butter
1/4 cup confectioners' sugar
1 teaspoon vanilla extract
8 ounces white chocolate-flavored or vanilla candy coating, chopped




Stir about 1/3 cup peanut butter, confectioners' sugar and vanilla extract in a medium bowl until the mixture is smooth.  Cover and refrigerate for 1 hour or until firm.  Shape the peanut butter mixture into 24 balls (about 1/2 teaspoon each).  Place the balls into 24 (1 1/4-inch) paper candy cups.

Heat and stir the candy coating and the remaining peanut butter in a 1-quart heavy saucepan over medium heat until the mixture is melted and smooth.  Spoon the coating mixture into the candy cups.  Refrigerate for 30 minutes or until firm.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
