3 pounds apple, peeled and cut in quarters
1 cup water
1/2 cup sugar
1 tablespoon Lemon juice
1/2 teaspoon ground cinnamon

Heat the apples and water in a 6-quart heavy saucepot over medium-low heat for 20 minutes or until the apples are tender, stirring occasionally.
Stir the sugar, lemon juice and cinnamon in the saucepot and cook and stir for 1 minute.  Remove the saucepot from the heat.

Using a potato masher, mash the apple mixture until desired consistency.
