Baked Acorn Squash
Applesauce, maple syrup and ginger add just the right amount of sweetness to this savory baked squash.  It's easy to prepare and makes an impressive side dish to complement poultry or pork.

3 acorn squash, cut in half and seeded
1 1/4 cups applesauce
3 tablespoons Butter, diced
3 tablespoons pure maple syrup
1 1/2 teaspoons ground ginger




Heat the oven to 350°F.  Place the squash, cut-side up, into a shallow roasting pan.  Fill the pan with hot water to halfway up the sides of the squash.

Stir the applesauce, butter, syrup and ginger in a medium bowl.  Spoon the applesauce mixture into the centers of the squash.  Cover the pan.

Bake for 1 hour or until the squash is tender.

Recipe Note: Make sure to be careful and wear oven mitts when you lift the heavy pan out of the oven.
