Country Corn Bake
Here's a great way to get everyone to eat their vegetables...bake them up with sautéed onions, Cheddar cheese soup and saltine cracker crumbs.

1 package (16 ounces) frozen vegetable combination (whole kernel corn, broccoli and red peppers)
1/4 cup water
2 tablespoons margarine
1 medium onion, chopped (about 1/2 cup)
1 can (10 3/4 ounces) Campbell's® Condensed Cheddar Cheese Soup
1/4 cup milk
1 1/3 cups saltine cracker crumbs
Vegetable cooking spray

Heat the vegetables and water in a 3-quart saucepan over medium-high heat to a boil.  Reduce the heat to low.  Cover and cook until the vegetables are tender-crisp.  Drain the vegetable mixture well in a colander.
Heat 1 tablespoon margarine in the saucepan over medium heat.  Add the onion and cook until tender-crisp.  Stir in the soup and milk. Stir in the cracker crumbs and vegetable mixture.
Spray an 8-inch square baking dish with the cooking spray. Spoon the corn mixture into the baking dish.  Cut the remaining margarine into small pieces and sprinkle on top.
Bake at 350°F. for 25 minutes or until the top is golden brown.
Easy Substitution: You can substitute crushed Pepperidge Farm® Goldfish® crackers for the saltines.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
