Potato Cheese Soup

6 medium potato, peeled and cut into cubes (about 6 cups)
1/4 cup chopped celery
1 small onion, chopped (about 1/4 cup)
1/4 cup chopped carrot
1/4 cup butter (1/2 stick), melted
2 cups milk
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 package (8 ounces) cream cheese, softened
shredded Cheddar cheese
bacon bits
Pepperidge Farm® croutons, any variety

Place the potatoes, celery, onion and carrot in a 4-quart saucepan. Cover with water and heat to a boil over high heat. Reduce the heat to low and cook for 15 minutes or until the vegetables are tender. Drain in a colander. Return the vegetables to the saucepan.
Place the butter, milk, soup and cream cheese in a blender and blend until the mixture is smooth. Pour the soup mixture over the vegetables and heat through over medium heat. Top with the Cheddar cheese, bacon bits and croutons, if desired.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
