1 cup Swanson® Vegetable Broth (Regular or Certified Organic)
2 green onion, sliced (about 1/4 cup)
2 tablespoons chopped, oil-packed sun-dried tomatoes
Freshly ground black pepper
1/4 teaspoon dried basil leaves, crushed
2/3 cup quick-cooking couscous
Vegetable cooking spray




Heat the broth, onions, tomatoes, pepper and basil in a 2-quart saucepan over medium-high heat to a boil. Remove from the heat and stir in the couscous. Cover and let stand for 5 minutes. Fluff with a fork.
Spray the bottoms of 4 (6-ounce) custard cups with the cooking spray. Spoon the couscous mixture into the cups and press down firmly. Unmold the cups onto 4 serving plates.
Easy Substitution: Or you may use chopped sun-dried tomatoes (packaged dry) softened according to the package directions.
