Creamy Tuna Mold

2 cups cold water
2 envelopes (0.25 ounces each) unflavored gelatin
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Celery Soup (Regular or 98% Fat Free)
1 tablespoon lemon juice
1/3 cup cream cheese, softened
1 can (6 ounces) tuna, drained
1 medium carrot, shredded (about 1/2 cup)
1 stalk celery, chopped (about 1/2 cup)
2 tablespoons chopped parsley
mixed salad greens




Pour 1 cup water into a 1-quart saucepan.  Sprinkle the gelatin over the water.  Cook and stir over low heat until the gelatin is dissolved.  Remove the saucepan from the heat.
Stir the soup, lemon juice and cream cheese in a large bowl until the mixture is smooth.   Stir in the tuna, carrot, celery and parsley.  Gradually stir in the gelatin mixture and the remaining water.  Cover and refrigerate for 1 hour or until the mixture is slightly thickened.
Spoon the soup mixture into a 5-cup mold.  Refrigerate overnight. Unmold and serve on the salad greens.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
