1 pound fettuccine
6 egg yolks, lightly beaten
1 pint half-and-half
2 ounces butter
1/2 pound (white) turkey, cooked and julienne cut
freshly ground black pepper, to taste
salt, to taste
4 ounces grated Parmesan cheese, freshly grated




Cook fettuccine in boiling salted water until tender. Drain.

In a medium bowl, whisk the cream and egg yolks until smooth.

Put the butter in a saute pan and melt over medium-high heat. Add turkey strips and brown lightly. Add the cooked fettuccine and heat through.

Add the egg/cream mixture and gently fold until all the liquid is absorbed.

Season to taste with pepper and salt. Add grated Parmesan and serve immediately.
