Slow-Cooked Short Ribs & Beans
Get out your slow cooker to make this delectable dish featuring beef short ribs and a trio of beans slowly simmered slowly in robust picante sauce.  It just doesn't get any better!

1 tablespoon Vegetable Oil
4 pounds beef short ribs, cut into serving-sized pieces
1 large onion, chopped (about 1 cup)
2 teaspoons minced garlic
1 jar (16 ounces) Pace® Picante Sauce
1 can (about 15 ounces) Great Northern beans, rinsed and drained
1 can (about 15 ounces) black beans, rinsed and drained
2 cans (about 15 ounces each) red kidney beans, rinsed and drained
Chopped fresh cilantro leaves




Heat the oil in a 12-inch skillet over medium-high heat. Add the beef and cook until it's well browned on both sides. Pour off any fat. Place the beef into a 5-quart slow cooker.
Stir the onion, garlic, picante sauce and beans in the skillet. Pour the bean mixture over the beef.
Cover and cook on LOW for 8 to 9 hours or until the beef is fork-tender. Sprinkle with the cilantro, if desired.
Time-Saving: Or you may cook this recipe on HIGH for 4 to 5 hours.
