Neapolitan-Style Pasta Shells
This cheesy baked pasta dish is loaded with sautéed zucchini, mushrooms and onion and a flavorful Italian sauce.  It's a delicious way to eat your veggies!

2 tablespoons Vegetable Oil
2 medium zucchini, sliced (about 3 cups)
6 ounces sliced mushroom (about 2 cups)
1 medium onion, chopped (about 1/2 cup)
1/4 teaspoon ground black pepper
2 cups Prego® Three Cheese Italian Sauce
3 cups medium shell-shaped pasta, cooked according to package directions (about 4 1/2 cups)
1 cup shredded mozzarella cheese (about 4 ounces)




Heat the oil in a 3-quart saucepan over medium heat. Add the zucchini, mushrooms, onion and pepper and cook until the vegetables are tender-crisp, stirring occasionally.
Stir the Italian sauce and pasta in the saucepan and mix well. Spoon the pasta mixture into a 2-quart shallow baking dish and sprinkle evenly with the cheese.
Bake at 350°F. for 30 minutes or until the pasta mixture is hot and bubbling.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
