Mushroom-Garlic Oven Baked Risotto
You can enjoy this creamy risotto without all the usual stovetop stirring...this luscious variety bakes in the oven to make a meatless entrée perfect for a busy weeknight.

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom with Roasted Garlic Soup
3 1/3 cups water
1 1/4 uncooked regular long-grain white rice
1/4 cup slivered almond
1/2 teaspoon dried thyme leaves, crushed




Stir the soup, water, rice, almonds and thyme in a 2-quart casserole. Cover the dish.
Bake at 375°F. for 45 minutes or until the rice is tender. Stir the mixture. (Risotto will absorb liquid as it stands.) Let stand for 5 minutes.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
