Jamaican Turkey Drums
If you can't go to the islands, bring them to you. This tasty meal will make you feel like you are in the caribbean.

3 (about 2 pounds) turkey leg, or drumsticks
1 tablespoon Crisco® Vegetable Oil
1 1/2 cups orange juice
1/2 cup reduced-sodium chicken bouillon
1 1/2 teaspoons grated orange rind
1 1/2 teaspoons vinegar
1/8 teaspoon hot pepper sauce
1 small bay leaf
1 teaspoon cornstarch
1 tablespoon water




In 5-quart saucepan, over medium-high heat, brown drumsticks in oil about 4 minutes per side.

Add orange juice, chicken bouillon, orange rind, vinegar, hot sauce and bay leaf. Bring mixture to boil; reduce heat, cover and simmer about 45 minutes or until drumsticks are fork tender, juices run clear and meat thermometer registered 180-185 degrees F. Remove drumsticks. With a fork remove meat from bones; set aside.

In same saucepan, over high heat, bring cooking liquid to a boil until it is reduced by half (about 1-1/4 cups). Remove bay leaf.

In small bowl, combine cornstarch and water; stir into boiling liquid. Stirring constantly, cook until mixture is slightly thickened. Fold in turkey meat and serve.
