Southwest Chicken & Pasta
Colorful and full of flavor, this one-pot supper features broccoli, green pepper, chunks of chicken and corkscrew pasta simmered in a creamy sauce spiked with Pace® Picante. Fast, easy and satisfying, this dish is sure to become a favorite.

3 cups uncooked corkscrew-shaped pasta (rotini)
2 cups broccoli florets cut into 1-inch pieces
1 medium green or red pepper, chopped (about 3/4 cup)
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1/4 cup milk
3/4 cup Pace® Chunky Salsa  or Pace® Picante Sauce
1 1/2 cups cubed cooked chicken
grated Parmesan cheese




Cook the pasta according to the package directions in a 3-quart saucepan.  Add the broccoli and pepper for the last 4 minutes of cooking time.  Drain the pasta mixture well in a colander.  Return the pasta mixture to the saucepan.
Stir the soup, milk, salsa and chicken in the saucepan and cook until the mixture is hot and bubbling.  Sprinkle with the cheese.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
