Apricot Cobbler

1/4 cup unsalted butter, melted
1/2 cup all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1 pinch salt
1/2 cup milk
2 cans (15 1/4 oz. each) almond flavored apricot halves, undrained




Preheat oven to 375 degrees.

Pour melted butter into an 8 x 8 inch baking dish. In a medium bowl, combine flour, the sugar, the baking powder and the salt and mix well. Stir in the milk, mixing until just combined. Pour the undrained apricots over the batter but do not stir them together.

Bake in the preheated oven for 40 to 45 minutes, or until top is golden-brown. Serve warm. For extra sweetness, sprinkle about 1 teaspoon of sugar over the top.
