Shiitake and Wild Rice Pilaf

4 ounces shiitake mushrooms, sliced
1 garlic clove, minced
2 tablespoon olive oil
2 cups wild rice, cooked
1/2 cup chopped walnuts, toasted
1/4 cup green onions, sliced
1 tablespoon lemon peel, grated




In broad skillet, saute mushrooms and garlic in oil until tender, 1 to 2 minutes. Add rice, walnuts, onion and lemon peel, mixing to blend. Season with salt and pepper; heat to warm through.
