Crunchy Tuna Rice Salad
This Crunchy Tuna Rice Salad is very tasty. Serve in pita bread, garnished with lettuce.

3 cups cooked rice, cooled
1 12 ounce can tuna in water, drained and flaked
2 medium carrots, shredded
1 medium bell pepper, chopped
1 cup jicama, chopped
2 cups plain nonfat yogurt or 3/4 cup green onions, thinly sliced
1 1/2 teaspoons lemon pepper
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 whole pitas, halved
to taste lettuce, shredded




Combine rice, tuna, carrots, bell pepper, jicama, and onion in large bowl. Add yogurt, lemon pepper, salt and pepper. Toss to combine ingredients. Chill at least one hour. Serve in pita bread with lettuce.
