3 hard boiled eggs, chopped
1/2 cup reduced-calorie mayonnaise
1/2 cup green onions, finely chopped
1/2 cup sweet pickles, chopped
1 teaspoon prepared mustard
1/4 teaspoon ground black pepper
to taste lettuce leaves
1 2 ounce jar pimento, diced (1/4 cup)




Combine rice, eggs, onions, pickles, pepper, mayonnaise, pimentos and pepper in large bowl. Toss to thoroughly combine. Chill, serve in lettuce leaves, if desired.
