2 (15.8-ounces) cans black-eyed peas, rinsed and drained
1 cup celery, chopped
1 cup green peppers, chopped
3 hard-cooked eggs, chopped
1/3 cup green onions, sliced
4.5 ounces mushrooms, sliced and drained
4 ounces pimiento, diced and drained
3/4 cup Italian salad dressing, low fat

Combine ingredients in a large bowl, tossing gently. Cover and chill at least 8 hours, stirring occasionally. Serve in a lettuce-lined bowl.
