Potatoes Fantango
A great side-dish or appetizer that everyone will enjoy!

4 serving size (6-8 oz.) baking potatoes
4 tablespoons butter, melted
2 teaspoons fresh basil, chopped
2 teaspoons fresh chopped oregano
1/2 cup Grated Parmesan cheese, fresh
1 teaspoon salt
1/2 teaspoon paprika
1 teaspoon Dijon mustard
1 cup sour cream




You may peel potatoes or scrub and pat dry leaving skins on as you prefer. Cut thin slices across potatoes but not cutting through so that potatoes can fan apart.

Place potatoes in microsafe dish. Spoon 1 tablespoon melted butter over each and sprinkle with ½ teaspoon parsley, basil and oregano. *1/8 teaspoon each if using dry herbs.

Microwave on HIGH power covered for 10 minutes. Midway spoon melted butter over potatoes again and turn dish a quarter turn.

Spoon melted butter over potatoes and each with 2 tablespoons cheese. Microwave covered on HIGH Power for 5 minutes more, turning once. Sprinkle with salt if desired. Sprinkle with paprika.

Transfer potatoes to serving platter. Add mustard and sour cream to butter and herbs in baking dish. Warm 15-30 seconds on HIGH uncovered. Serve in a small bowl in the center of the serving platter. Garnish with fresh herbs.
