Wisconsin Potato Logs
A great way to make potatoes.

3 cups mashed potatoes, cooked
1 tablespoon butter
1/2 teaspoon salt
1/8 teaspoon pepper
1 egg yolk
1 tablespoon onion, finely chopped
1/2 cup bread crumbs, fine
1 egg
2 tablespoons water

Cook Wisconsin Potatoes, drain, mash and season with butter, salt, and pepper. Mix cooled potatoes with egg yolk and onion. Shape into rolls 2 ½" long. Coat with flour then roll in mixture of diluted egg and bread crumbs. Melt 4 – 5 tablespoons shortening I pan. Slowly fry logs until brown on all sides.
