1 egg white, slightly beated
1/3 cup onion, finely chopped
1/4 cup seasoned bread crumbs
1/4 cup green chili peppers, diced
1 garlic clove, large, finely minced
2 tablespoons fresh cilantro, snipped
1 tablespoon apple cider vinegar
1 1/2 teaspoons chili powder
1/4 teaspoon salt, optional
Pinch cayenne pepper
1/2 pound extra lean ground beef
Dash canola oil, for the grid, if using grill

In a medium mixing bowl, combine the egg white, onion, bread crumbs, chili peppers, garlic, cilantro, vinegar, chili powder, salt, if using, and cayenne pepper. Add the ground beef and mix well. Shape the mixture into eight 3-inch patties. Prepare the grill or electric grilling machine for cooking. If using a charcoal grill, oil the grid and place the patties over ashen coals and cook them for about 5 minutes per side. The patties should look like well-done hamburgers, with no pink and with clear juices. If using an electric grilling machine, place the patties on a hot grill and cook for 4 to 5 minutes.
