Easy Brisket
This is a delicious, but easy brisket to make.

6 pounds beef brisket
2 cans whole berry cranberry sauce
1 envelope onion soup mix
1 cup cold water
2 large onions, sliced
1 teaspoon salt
1 teaspoon pepper
2 pounds baby carrots, washed, with ends cut off




Preheat oven to 350 degrees. Place brisket in a large, greased Dutch oven and sprinkle with 1/2 the salt and pepper; turn the brisket and sprinkle with remaining salt and pepper. Place onions on top of brisket and put it uncovered, in the oven. Cook for 15 minutes. In a bowl add onion soup mix, cold water and cranberry sauce and stir well. Remove brisket from oven and turn, add carrots and onion soup and cranberry sauce mixture, cover and return to oven and cook until tender, approximately 2 hours. Remove from oven and slice.
