Apricot Bars

3/4 cup unsalted butter, softened
1/4 cup brown sugar, packed
1 egg, slightly beaten
1 teaspoon vanilla
1 1/2 cups quick cooking oats, or old-fashioned
1/2 cup all-purpose flour
1/2 cup wheat germ
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup apricot halves, dried
1/2 cup walnuts, chopped
1/2 cup coconut, shredded




Heat oven to 350 degrees. Cream butter and sugar; beat in egg and vanilla. Add oats, flour, wheat germ, cinnamon, and salt; mix until well blended. Stir in apricots, walnuts, and coconut. Spread dough evenly in 12x8-inch baking pan. Bake until golden brown, 18 to 20 minutes. Cool slightly; cut into bars.
