South of the Border Lamb Shanks

4 lamb shanks
1/4 cup onion, chopped
1 clove garlic, crushed
2 tablespoon olive oil
1 1/2 cups water
1 can (15 ounces) diced tomatoes, diced
1/2 cup celery, chopped
1 package (1.25 ounces) taco seasoning mix
1 can (14 ounces) kidney beans, drained
1 can (14 ounces) pinto beans, drained
2 tablespoons fresh cilantro, chopped




Lightly brown lamb shanks, onion and garlic in medium-hot oil. turning and stirring frequently. Add tomatoes, water and celery; blend in taco seasoning. Simmer, covered for one hour or until shanks are tender. Drain beans and add cilantro. Bring to a boil and cook until thoroughly heated; about 5 minutes.
