Lamb Roast Dijon
The dijon coating is a perfect compliment to the lamb.

1 lamb roast, boneless top round
1/2 cup Dijon mustard
1 cup Italian flavored bread crumbs
1/4 cup Parmesan cheese, grated
1/4 teaspoon garlic powder
1/4 teaspoon black pepper




Coat the roast with mustard. Mix together bread crumbs, Parmesan cheese, garlic powder and pepper. Pat the crumb mixture on the lamb, coating evenly. Place on rack and bake at 325 degrees 20 minutes per pound. Cook to internal temperature of 150 degrees for medium rare and 160 for medium. Remove from oven and let stand covered for to 10 minutes for easier carving.
