Lamb Enchilada Casserole

12 ounces ground lamb, lean
2 teaspoons chili powder
1 can (11 ounces) corn, with peppers, drained
8 ounces low fat sour cream
1/2 teaspoon dried cilantro
Non-stick cooking spray
8 6-inch corn tortillas
1 can (10 ounces) enchilada sauce
3/4 cup Shredded Cheddar cheese

Cook and stir ground lamb until browned; drain. Stir in chili powder, corn with peppers, 1/2 cup of the sour cream, and cilantro; mix well. Spray a 10x6 or 8x8-inch baking dish with non-stick spray coating. Arrange 4 of the tortillas in the dish. Spoon in about 2/3 of the meat mixture. Pour enchilada sauce over all. Bake in 375 degrees oven for 15 minutes. Sprinkle cheese on top and bake 5 minutes more. serve with a dollop of remaining sour cream.
