2 hard-cooked eggs
1/4 cup Crisco® Vegetable Oil
3/4 cup onion, finely chopped
1 pound chicken livers
1 teaspoon salt
freshly ground pepper




Peel the eggs under cold running water and set them aside. Heat the oil in a medium-sized skillet, add the onion and cook until softened and translucent. Remove the onion with a slotted spoon and set aside.
Add the livers to the skillet and cook over moderate heat for about 10 minutes, stirring occasionally. The livers should still be slightly pink in the center.
Put the livers in a food processor. Add the eggs, onion, salt and pepper. Process for 10 seconds for coarsely chopped livers, or longer for a smooth mixture. Chill for at least 4 hours before serving.
